- Broil the chicken: pound the tandoori spiced breasts to an even thickness (about ¾ inch) so they cook evenly. Broil on a lined sheet pan until cooked through to 165°F, flipping once, about 8 minutes per side. Rest 5 minutes, then chop or slice into strips. (Do steps 2–5 while the chicken broils, and step 6 while it rests.)
- Warm the corn in a saucepan or skillet on the stove until heated through.
- Toast the tortillas in a dry ceramic skillet over medium-high heat, about 30–60 seconds per side, until warmed with a few toasty spots. Keep them wrapped in a clean towel so they stay soft.
- Brown the potstickers: in a separate skillet, sauté the vegetable potstickers in olive oil until golden on the bottom, turning and adding dashes of water to deglaze and covering to steam them through.
- Prep the fresh stuff: dice the sweet onion, thinly slice the Romaine, and slice the grape tomatoes.
- Make the ranch crema: stir together the sour cream and ½ packet Hidden Valley Ranch seasoning. Set aside.
- Build the tacos: tortilla → sliced Romaine → tandoori chicken → diced onion → fire-roasted corn and tomatoes → a generous drizzle of the ranch crema. Potstickers on the side.
