Steps
- Preheat the oven to 375°F (190°C).
- Take the two frozen deep-dish pie crusts out of the freezer and let them thaw slightly according to the package directions.
- Dice the onion and sauté it in a skillet with a little butter or oil until deep golden brown. Transfer to a dish.
- Sauté the baby spinach for 1–2 minutes, just until wilted. Transfer to a dish.
- Divide most of the shredded cheese, the sautéed onion, wilted spinach, and cubed ham evenly between the two pie crusts.
- In a large mixing bowl or pitcher, whisk together the eggs, milk, salt, and black pepper until smooth.
- Pour the egg mixture evenly over both crusts, covering the fillings.
- Top each quiche with a final handful of the remaining cheese.
- Bake 40–50 minutes, until the centers are completely set and the tops are golden brown.
- Let cool 10–15 minutes before slicing and serving.
Substitutions
- Gruyère → cheddar or Swiss
- Vidalia → any yellow onion; Vidalia is sweeter when caramelized
Rachel's tips
- Take the onion all the way to deep golden brown — that's where the sweetness comes from, and it's worth the extra minutes.
- This is a double batch on purpose: bake both, serve one, freeze the other.
