Steps
- Preheat the oven to 350°F. Oil an 8×4-inch loaf pan or muffin pan with the neutral oil.
- Mash the bananas with a fork.
- In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
- Melt the butter. In a medium bowl, whisk together the melted butter, honey, and agave until well combined, about 2 minutes. Add the eggs and vanilla and mix well. Stir in the mashed bananas.
- Add the dry ingredients to the banana mixture and whisk just until combined — do not overmix.
- Pour the batter into the prepared pan and bake about 45 minutes, until a toothpick inserted in the center comes out clean.
- Cool in the pan 5 minutes, then turn out onto a wire rack to cool completely.
Variations
- Muffins — same batter, standard muffin pan, bake 25 minutes.
Substitutions
- Unbleached all-purpose flour → organic almond flour, 1:1, for a gluten-free alternative
Rachel's tips
- No mixer? No problem. Melting the butter first makes everything whisk-able by hand — and it's fine if the mixture stays a little lumpy.
- The riper the bananas, the sweeter the loaf. Heavy brown speckling is what you want.
- Start checking at 40 minutes; honey-sweetened bakes brown faster than sugar ones, so tent with foil if the top darkens before the center is done.
- Note: honey isn't recommended for babies under 12 months.
