Steps

  1. Preheat the oven to 350°F. Grease and flour an 8×4-inch loaf pan or muffin pan.
  2. Mash the bananas with a fork.
  3. In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
  4. Melt the butter. In a medium bowl, whisk together the melted butter, honey, and agave until well combined, about 2 minutes. Add the eggs and vanilla and mix well. Stir in the mashed bananas.
  5. Add the dry ingredients to the banana mixture and stir just until combined — do not overmix.
  6. Pour the batter into the prepared pan and bake 45–60 minutes, until a toothpick inserted in the center comes out clean.
  7. Cool in the pan 5 minutes, then turn out onto a wire rack to cool completely.
Variations
  • Muffins — same batter, standard muffin pan, bake 25 minutes.
Rachel's tips
  • No mixer? No problem. Melting the butter first makes everything whisk-able by hand — and it's fine if the mixture stays a little lumpy.
  • The riper the bananas, the sweeter the loaf. Heavy brown speckling is what you want.
  • Start checking at 45 minutes; honey-sweetened bakes brown faster than sugar ones, so tent with foil if the top darkens before the center is done.
  • Note: honey isn't recommended for babies under 12 months.
